Lucilla IACUMIN

Lucilla Iacumin is a Full Professor of Food Microbiology at the University of Udine, where she has worked since 2008 helding positions as Assistant, Associate, and, since 2022, Full Professor. She holds a Master’s degree in Food Science and Technology (2001) and a PhD in Food Microbiology (2004). Her research focuses on food safety, innovative fermentations, bioprotective microorganisms, sustainable food and wine production, microbial ecology, and the valorization of agri-food by-products. She has gained international experience as a visiting scientist in South Africa, Croatia, and Canada.

Professor Iacumin has coordinated or participated in more than 24 national and international research projects and has co-authored over 350 scientific outputs, including 167 articles in peer-reviewed journals. She is also Deputy Director of her Department, Coordinator of the Bachelor’s Degree in Viticulture and Enology and President of the Specialization School in Husbandry, hygiene, pathology of aquatic species, and control of derived product. She has supervised numerous students at Bachelor, Master, and PhD levels, contributing extensively to academic training and technology transfer.
